"Amarillo" is an aromatic hop typically used only at the end of the boil, including for dry hopping.
Amarillo hops impart a distinct floral, spicy, tropical, and citrus flavor and aroma to beer.
Amarillo hops have strong bittering properties – 9-11% alpha acids. Additionally, these hops have one of the highest myrcene oil contents of all hops (60-70% of total oils). The exceptionally high myrcene content gives the hops a very sweet citrus flavor and aroma.
Amarillo hops are often paired with Citra, Simcoe, and Mosaic in many juicy IPAs and pale ales.
