Amarillo is an aromatic hop that is usually used only at the end of cooking, including dry hopping.
Amarillo hops give beer a distinct floral, spicy, tropical, citrus flavor and aroma.
Amarillo hops have strong bitter characteristics - 9-11% alpha acids. In addition, hops have one of the highest myrcene oils of all hops (60-70% of all oils). The extremely high myrcene content gives the hops a very sweet citrus flavor and aroma.
Amarillo hops are often combined with Citra, Simcoe and Mosaic in many juicy IPAs and pale ales.
