
SafBrew BR-8 Brewer's Yeast
Dry brewer's yeast Fermentis SafBrew BR-8
BR-8 is a Brettanomyces bruxellensis yeast strain developed by Fermentis. It is primarily used for secondary fermentation of beers, especially those that are intended to have a "funky" or "wild" character.
Flavor profile:
Phenolic compounds that give it a distinctive flavor.
Over time, it takes on "fun" notes, described as barn, horse saddle, or leather.
These "fun" notes are balanced by refreshing fruity notes.
The flavor profile of beer changes and becomes more complex as the beer ages.
Usage:
It is specially designed for secondary fermentation in bottles or barrels.
It can be used in combination with other yeast strains for primary fermentation.
The ideal fermentation temperature is between 15 °C and 25 °C.
Dosage rate for secondary fermentation: usually 5-10 g/hl (during primary fermentation, dose 50 g/hl, together with conventional yeast (maltotriose-positive yeast)).
Rehydration: SafBrewTM BR-8 cannot be rehydrated directly in beer. Add at least 10 times its weight of sterile water to the yeast at 25-29°C. Allow to stand for 15-30 minutes. Stir gently until the yeast is creamy and then add to the beer. Do not use for secondary fermentation when the primary fermentation is performed with maltotriose-negative yeasts as maltotriose remains at the end of the fermentation.
Carbonation will be achieved within 1-3 months of aging (carbonation at a lower final temperature (e.g. 15°C) may take longer than 3 months)
