The “overpressure” valve helps to maintain the pressure inside the vessel and not exceed it. For example, if you were to increase the pressure in the vessel to 15 psi, then attach a fill valve, you could set the pressure below 15 psi to allow fermentation.

This kit comes with a bubbler for when you can't ferment under pressure and use the bubbler for fermentation, then replace the cap with the red carbonation cap and transfer the finished beverage to keg, bottles or cans under pressure.
