Orthophosphoric acid
75% phosphoric acid (orthophosphate) is a common ingredient in the brewing process. This acid can be used to acidify the wort (to adjust the pH). Phosphoric acid helps to reduce the pH of the wort or mash to an optimal level for efficient enzyme activity and sugar extraction. It gives the beer a good flavor and is an additional source of phosphorus for the yeast. The concentration of this acid is higher than, for example, lactic acid, so less of it is needed. Phosphoric acid can be used to disinfect the yeast before re-fermentation. It helps to kill unwanted bacteria and contaminants without harming the yeast.
