Liquid brewer's yeast Saisonstein (OYL-500)
Saisonstein® is Omega's original genetic hybrid of two Saison varieties - French (OYL-026) and Belgian (OYL-027). It is versatile, aromatic and silky in taste. It stands out with great heaviness and ferments more reliably and thoroughly than its predecessors. Spicy, complex, sour, dry and crisp, with a bit of the gummy character of the Belgian side, and more fruit and less phenolics than the French side.
The STA1 gene of this strain - Saccharomyces cerevisiae var. diastaticus indicator - the tests are positive, it can ferment dextrins, so the attenuation is very high.
