Liquid beer yeast Saisonstein (OYL-500)
Saisonstein® is the original Omega genetic hybrid of two Saison varieties - French (OYL-026) and Belgian (OYL-027). It is versatile, aromatic and silky in taste. It has a high heaviness and ferments more reliably and thoroughly than its predecessors. Spicy, complex, sour, dry and crisp, with a slight bubblegum character typical of the Belgian side, and more fruit and less phenolic than the French side.
This strain tested positive for the STA1 gene - the indicator for Saccharomyces cerevisiae var. diastaticus - and it can ferment dextrins, so the attenuation is very high.
