Saaz is one of the four original "Noble" hops, characterized by an exceptional and classic aroma. It is known for its widespread use in numerous Bohemian lagers and pilsner brews. Its warm, herbal character stems from a high farnesene content, while other oils remain well-balanced.
Due to such a low alpha acid percentage, Saaz is undoubtedly an aromatic hop, though it provides a mild bitterness when used for bittering. Furthermore, an increased polyphenol content helps reduce oxidation, allowing beer brewed with Saaz to stay fresh longer.
