Wide fermentation temperature range: 10-30°C (50-86°F)
Very low nitrogen requirement: Ratio YAN**(mg/l)/sugar (g/l) >0.7
Very good fructose absorption
Recommended maximum initial SO2 content: 125mg/L
High malic acid intake (up to 1.5 g/l)
Dosage:
2–3 g / 10 L for primary fermentation
3–4 g/10 L for secondary fermentation
