This malt is characterized by a high degree of caramelization. Viking Caramel malt has zero amylolytic activity. Maillard products formed during the process can act as antioxidants and contribute to flavor stability. Caramel malt generally improves foam quality and foam retention. Viking Caramel 50 malt is perfect for winter beers, ales and other aromatic beers such as dark lagers and stouts. Small amounts can also be used to adjust the color and flavor of pale lagers.
